3 bites: scallop in the shell served with seaweed butter, Zeeland oyster with gin and tonic and a veloute; of mussels and fennel.

Intermediate 
Raw marinated corvina, with blood tomato and herbs from our sea.

 

Main course

            Halibut softly baked, with lardo and Beluga lentils and foam sauce of cheese.

                           Deer back fillet, wild toads chairs and celeriac structures.
